Abstract

Tomatoes (lycopersicum esculentum) are holticulture plants which mostly cultivated in Indonesia. Lycopene is a bright red carotene and carotenoid pigment, a chemical substance found in tomatoes. This research has been separated lycopene by using extraction method, at 65 celcius temperature. This research used heksana solvent and methanol as antisolvent. Sample used dry tomatoes powder. The result of this research found/shown that by using heksana solvent, the level of lycopene at 2,10 mg/100 g. Analysis of lycopene cluster function had been done by using spectroscopy, fourier transform inferred ( FT-IR).
